Baked French Toast casserole is a favorite at our house. Made with a crispy, cinnamon coating it is easy enough for any day of the week but delicious enough for a special occasion. It can be made the night before or the day you are going to serve it.

Why You’ll Love This Recipe

Time Saver. Baked French Toast comes together in minutes. You can also put it together the night before and let it sit in the refrigerator overnight. Just bake in the morning. It’s perfect for breakfast, brunch or dinner.

Amazing Flavor. My version of french toast is covered in crispy, crunchy cinnamon goodness.  I used Cinnamon Toast Crunch cereal to create the crispy coating and cinnamon flavor.

Ingredients

  • French Bread, Brioche Bread, Challah Bread. Use a thick sliced loaf of bread, about 3/4 inch thick. Buy sliced bread or slice your own.
  • Eggs. I use large eggs.
  • Half and Half or use whipping cream. You can also use almond milk if needed.
  • Sugar
  • Vanilla Extract
  • Cinnamon
  • Cinnamon Cereal  such as Cinnamon Toast Crunch

How to Make Baked French Toast

  • Grease a large baking sheet
  • Whisk together half and half, eggs, sugar, vanilla and cinnamon.  Mix well to combine.  Pour into a flat bottom bowl, pie plate or baking dish.
  • Crush your cinnamon cereal.  I like to put it in a zippered plastic bag and roll over it with a rolling pin.
  • Place crushed cereal in another flat bottom bowl or pie plate.

  • Dip both sides of bread into the egg mixture.
  • Dip both sides of bread into crushed cereal and place on baking sheet in a single layer.

  • Cover with wax paper or plastic wrap and place in freezer for 2 hours or overnight, until bread is firm.
  • Bake uncovered in a 425 degree F oven for 15-20 minutes or until golden brown and cooked through.

  • Cinnamon Syrup
  • Sweetened Whipped Cream
  • Buttermilk Syrup
  • Maple Syrup
  • Fresh Fruit such as bananas or berries
  • Butter or Honey Butter

How to store baked french toast?

Keep any leftover French toast in an airtight container in the refrigerator for up to three days. You can use a zippered plastic freezer bag too.

What kind of bread is best to use?

For the best results, use a high quality bread. I like to use a bakery-style heartier bread such as French bread, Challah bread, sourdough bread or Brioche bread. The Challah and Brioche bread will give you a softer middle. For this recipe, you can use fresh bread or day old bread.

Baked French Toast is delicious enough for a holiday breakfast, but easy enough for any day of the week. Soft and delicious with a crunchy cinnamon coating.

  • 4 eggs lightly beaten
  • 2 Tbsp sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 8 slices French bread 3/4″ thick
