Satisfy that sweet craving. This ooey, gooey, sweet cinnamon pull apart bread is the perfect thing to enjoy for breakfast, brunch, dessert or with a cup of coffee, tea or a cold glass of milk!

The perfect amount. No need to worry about lots of leftovers, this recipe for easy monkey bread is the perfect amount for one person. Of course you can double or triple it if you need to feed a few more people.

Quick and easy. Thanks to using store bought biscuits and the air fryer you can have this treat ready in under 15 minutes!

Ingredients for Single Serve Monkey Bread

Butter, salted

Sugar. You’ll need granulated sugar, brown sugar and powdered sugar if you are adding a glaze.

Ground Cinnamon

Biscuit. I use Pillsbury Grands Flaky, Original refrigerated biscuits. You only need one biscuit for this recipe. You can freeze the remaining biscuits and just take one out of the freezer next time a monkey bread craving hits.

Milk (if making glaze) but you also use water. Use 2 %, skim milk or whatever you have on hand.

How to Make Single Serve Monkey Bread

  • Cut one biscuit into eight pieces. Cut in half, cut each half in half and then again cut each of the four pieces in half. Roll each piece of biscuit dough into a ball.

  • In a bowl combine 1 Tbsp granulated sugar and 1/2 tsp cinnamon. Stir to combine.
  • Add in biscuit pieces and toss to coat with sugar mixture.
  • Spray a 6 oz. ramekin with non stick cooking spray.

  • Add in dough balls. You can sprinkle in any remaining cinnamon sugar mixture if you like, or leave it out.
  • In a small bowl, combine 1 tsp of melted butter and 1 tsp of brown sugar.
  • Pour mixture over biscuit pieces.

  • Place ramekin in air fryer on the air fryer setting at 330 degrees F for 7 minutes. To bake in the oven, preheat oven to 350 degrees F and bake for 20 minutes or until dough is cooked through.

  • While cooling mix up the glaze if you are adding. Combine 2-3 Tbsp of powdered sugar with just enough milk or water to make a nice drizzling consistency. Start with just a small amount and add more as needed.

Tips from leigh Anne

  1. I like to line my air fryer with a paper liner in case anything bubbles over or spills. Makes clean up much easier.
  2. When I freeze the leftover biscuits, I lay them out on a cookie sheet and flash freeze them until frozen solid. Then I put them into a zippered freezer bag and I can remove them one at a time as needed.
  3. If you don’t want to use store bought biscuits you could make your own biscuits. Use this recipe for small batch biscuits.

Frequently Asked Questions

Can I use frozen dinner rolls instead of biscuits?

Yes, you can use two frozen dinner rolls, thaw but don’t allow to start rising. Cut each roll into four pieces, roll into a ball and roll in cinnamon sugar. You could also use Pillsbury crescent roll dough and cut each piece of dough into four pieces and roll into balls.

Can I add nuts to single serve monkey bread?

If you like, you can add in some finely chopped nuts such as walnuts or pecans. I’d use about 1 Tbsp of chopped nuts and sprinkle between the layers of biscuit dough.

I don’t have a ramekin, what else can I use?

You could use a muffin tin if you don’t have a small ramekin.

Why You’ll Love This Recipe!

Amazing Lemon Flavor! The best part of this lemon pull-apart bread is how it tastes.  It is full of lovely lemon flavor.  

So Easy to Make! The second best part is how easy the recipe is because it uses frozen roll dough!  I actually found this recipe over at the Rhodes website and it was love at first site and first taste!  

Great Texture: The sugar creates a nice crunchy, lemony texture on top and the inside of the roll is soft and sweet.

No Yeast Involved! Because these rolls are made with store bought, frozen roll dough there is no instant yeast or dry ingredients involved!

Ingredients Needed

  • Frozen Dinner Rolls. I use Rhodes frozen rolls but you can use other brands. Each roll weighs about 1.3 oz. See below if you prefer to make your own roll dough.
  • Lemons
  • Granulated Sugar
  • Butter, salted
  • Powdered Sugar

How to Make Lemon Pull Apart Rolls

  • Remove frozen rolls from freezer, place on a baking sheet or plate and cover with plastic wrap. Allow to thaw at room temperature. You want them to be thawed but still cold.  Depending on the temperature of your house, this will take around 1 1/2 hours.  I used 12 rolls for my 10 inch cast iron skillet pan.

  • Mix up lemon sugar mixture by combining sugar and lemon zest.  Stir together with a fork or spoon, you can even use your fingers to rub the lemon zest into the sugar so it gets infused into the sugar.
  • Cut the rolls in half with a pair of scissors and lay them into the pan.  Pour melted butter over the top.

  • Sprinkle half of the lemon sugar mixture over the top.   Cover them with plastic wrap.

  • Set the rolls in a nice warm place and let them rise for an hour or until they double in size.
  • Sprinkle the other half of the sugar mixture on top after they have risen.

  • Bake at 350 degree F until they are nice and golden brown, about 20-25 minutes.
  • Combine powdered sugar, melted butter and lemon juice until you have a nice drizzling consistency.
  • Remove the rolls from the oven and cool for five minutes, then glaze.

Tips from leigh Anne

  1. Don’t let the rolls start to rise before you cut them in half, they should be still cold and just thawed. Time will vary depending on how warm your house is.
  2. Enjoy this delicious great warm, I think that is the way it is best enjoyed!
  3. If you prefer to make your own homemade dough, form your rolls into 1.3 oz. balls after the first rise and then cut them in half and continue with recipe as written.

  • 12 frozen dinner rolls thawed but still cold
  • zest from 2 whole lemons
  • 1/2 cup sugar
  • 1/4 cup butter melted

Citrus Glaze

  • 1 cup powdered sugar
  • 1 tablespoon butter melted
  • 2 tablespoons fresh lemon juice

Instructions

  • Mix lemon zest with sugar.
  • Cut rolls in half and place in a 10-inch cast iron pan or 9×13-inch sprayed baking pan.
  • Drizzle 1/4 cup melted butter over rolls.
  • Sprinkle with lemon zest/sugar mixture, reserving 1/2 of mixture to sprinkle on just before baking.
  • Cover with sprayed plastic wrap. Let rise until double in size.
  • Remove wrap. Sprinkle on remaining mixture.
  • Bake at 350°F 20-25 minutes. Remove immediately from pan and place on cooling rack.
  • Combine glaze ingredients and mix well. Drizzle over pull-aparts.

Why You’ll Love This Recipe

In trying to replicate family favorite foods for my daughter who is eating gluten free, I have found breads to be the biggest challenge. I tried many recipes before finding this one. The gluten free biscuits we were able to make with this recipe are flaky and flavorful.

Ingredients Needed

  • Gluten Free Flour, I like Bob’s Red Mill Cup for Cup Gluten Free Flour. You can also use my Gluten Free Flour Mix.
  • Milk, I used almond milk but you can use regular milk or buttermilk.
  • Granulated Sugar
  • Baking Powder, be sure your baking powder is nice and fresh for best results.
  • Salt
  • Butter, or your favorite butter substitute.

How to Make Gluten Free Biscuits

  • Mix together gluten free flour mix, sugar, baking powder and salt.

  • Add in butter and mix together until crumbly and pea sized.

  • Add in eggs and milk. Mix until a cohesive dough forms(will be slightly sticky)

  • Sprinkle counter with additional gluten free flour to make rolling easier.
  • Roll out dough to 1/2 inch thick.

  • Fold dough into thirds lengthwise.

  • Fold dough into thirds crosswise and then roll out again into a 1/2 inch thick rectangle. Repeat folding process and roll out again.

  • Cut out biscuits and placed on a greased or parchment paper lined cookie sheet.

  • Put biscuits into freezer for 20 minutes to allow butter to solidify and create flaky biscuits

Tips

  1. Dough made with gluten free flours always has a bit of a different texture and can be a bit stickier.  Just add enough flour that it is manageable and not too sticky to work with.
  2. If you don’t have a biscuit cutter you can use the rim of a glass to cut biscuits.
  3. Putting the biscuits in the freezer allows the butter to solidify and help create flaky biscuits. Do not skip this step.

Frequently Asked Questions

What happens if I don’t freeze the biscuits before baking?

Depending on how warm your butter got when rolling out the dough, your biscuits may flatten out and not be flaky.

How do I store leftover biscuits?

Keep them stored in an airtight container at room temperature for 2-3 days. I find that gluten free biscuits dry out faster than ones made with regular all purpose flour.

Can I use regular all purpose flour instead of gluten free flour?

Why You’ll Love This Recipe?

Delicious. This bread is light, fluffy and buttery. It is fun to make and even more fun to eat. It is also a fun presentation and all you have to do is pull!

Ingredients for Pull Apart Bread

  • Water
  • Active Dry Yeast
  • Granulated sugar
  • Eggs
  • Butter, salted
  • All Purpose Flour
  • Salt

How to Make Pull Apart Bread

  • Add yeast to warm water and dissolve for 5 minutes. Add sugar to water. I use the bowl of my stand mixer with the dough hook.
  • Beat eggs into water mixture
  • Add in 3 cups of flour and beat well
  • Add 4 additional cups of flour, 4 Tbsp melted butter and salt
  • Mix well and knead until all the flour is absorbed
  • Put damp cloth over dough and let rise 1 hour or until double in size
  • Punch down and put in refrigerator several hours or overnight or use immediately.

  • Roll out your dough with a rolling pin on a lightly floured work surface and use a 2 inch round biscuit cutter  ( I use my grandma’s old biscuit cutter) to cut out circles of dough. 
  • Place the circles, standing upright, into your bundt pan that has 1/2 cup of melted butter sitting in it, just waiting to surround your dough!

  • Allow to rise for 1-2 hours or until dough is doubled in size, the temperature in your house will effect how fast the dough rises.

  • Bake in a 400 degree F oven for about 20 minutes or until bread is golden brown.
  • Allow the bread to cool for a few minutes in the pan and then loosen the edges and slide onto a pretty serving dish.

Now, go for it!  Just peel off a piece or two or three and enjoy the yummy, buttery goodness that is Buttery Pull Apart Bread!

Tips from leigh Anne

  1. Loaf Pan Method: (you will need 2 loaf pans), roll half the dough out to a 12 x 16 inch rectangle. Use a pizza cutter to cut the rectangle lengthwise into three equal strips. Then, cut the rectangle crosswise into 5 equal strips so that you are left with 15 pieces.  Place half of melted butter into loaf pan and stand dough pieces upright in pan. Repeat with other half of dough. Bake for approximately 40 -45 minutes or until baked through and golden brown on top. Brush with some additional butter before serving.
  2. How to Serve: Pull Apart Bread is best served warm out of the oven.
  3. Store Bought Biscuit Method: If you prefer, you can also make this pull apart bread with refrigerated biscuit dough. You will need three refrigerated 16.3 ounce cans of buttermilk biscuits.

Frequently Asked Questions

Can I make pull apart bread in a loaf pan?

If you don’t have a bundt pan you can make this bread in a 9 x 5 inch loaf pan. But you will need two loaf pans. If you only have one, use half the dough to make one loaf and keep the rest of the dough in the refrigerator in an airtight container for 2-3 days. See tips above for how to roll out and cut the dough.

Why did my dough not rise?

There are a few reasons why it may not have risen:
1. Expired Yeast. Be sure to check the expiration date on the package. Store yeast in the freezer to extend the shelf life.
2. Water Temperature. If your water is too hot you will kill the yeast, if it is too cool it won’t activate the yeast. Use a thermometer to check the temperature of your water, you want it between 105-115 degrees F.
3. Proofing Time. Be sure to give your dough adequate time to rise.
4. Environment Not Warm Enough. If your house is cold you may want to proof your dough in your oven. Place the dough in the oven, turn on the oven light and let it rise. Just be sure to remove it before you preheat the oven.

Can I add cheese to this?

How do I store leftover pull apart bread?

Cover with plastic wrap or aluminum foil or store in an airtight container at room temperature for 2-3 days. It is best enjoyed warm right out of the oven.

Buttery Pull Apart Bread

Delicious, buttery pull apart bread iis as fun to make as it is to eat.

Ingredients

  • 2 cups lukewarm water
  • 2 1/4 tsp yeast
  • 1/2 cup sugar
  • 2 eggs
  • 4 Tbsp butter melted
  • 7 cups flour
  • 1 Tbsp salt
  • 1/2 cup butter melted

Instructions

  • Add yeast to warm water and dissolve for 5 minutes
  • Add sugar to water
  • Beat eggs into water mixture
  • Add in 3 cups of flour and beat well
  • Add 4 additional cups of flour, 4 Tbsp melted butter and salt
  • Mix well and knead until all the flour is absorbed
  • Put damp cloth over dough and let rise 1 hour or until double in size
  • Punch down and put in refrigerator several hours or overnight
  • Melt 1/2 C butter and put in bundt pan
  • Divide the dough in half. The other half may be placed back in the refrigerator for the next day, will last 2-3 days
  • Roll dough out to about 1/4" to 3/8" thick, cut out using a 2 inch round biscuit or cookie cutter Place one layer of dough rounds, standing up, into the pan.
  • Let rise 2 hours
  • Bake at 400 degrees until golden brown, about 20 minutes
  • Loosen edges and turn onto a plate

Notes

  1. Loaf Pan Method: (you will need 2 loaf pans), roll half the dough out to a 12 x 16 inch rectangle. Cut the rectangle lengthwise into three equal strips. Then, cut the rectangle crosswise into 5 equal strips so that you are left with 15 pieces.  Place half of melted butter into loaf pan and stand dough pieces upright in pan. Repeat with other half of dough. Bake for approximately 40 -45 minutes or until baked through and golden brown on top. Brush with some additional butter before serving.
  2. How to Serve: Monkey bread is best served warm out of the oven.
  3. Store Bought Biscuit Method: If you prefer, you can also make this monkey bread with refrigerated biscuit dough. You will need three refrigerated 16.3 ounce cans of buttermilk biscuits.

Why You’ll Love This Recipe!

Quick and Easy. Several years ago I shared with you a recipe for 30 Minute Rolls and it has become one of the most popular recipes here on the blog.  I have heard back from so many of you who have tried them and loved them.  For some of you it was your first time making yeast rolls and it is the perfect recipe to start with.

Dressed up Version. For today’s recipe I decided to take that same recipe and dress it up a bit and add in some cheese and fresh herbs. These herb rolls are perfect for Thanksgiving, Christmas, Easter or just a weeknight meal.

The rolls have great texture and flavor.

Ingredients Needed

  • Herbs, I used some fresh rosemary from my garden but you could really use any herb or herb blend you like.  Just chop it up nice and fine. If you don’t have access to fresh herbs, dry herbs can also be used. Use half the amount of herbs if using dried herbs. You could also use oregano, parsley, thyme, or basil.
  • Cheese, I used a combination of four different cheeses.  Cheddar and a three cheese blend of Parmesan, Asiago and Romano.  You could use any cheese you like or combination! 
  • All Purpose Flour
  • Oil, vegetable or canola oil. You want a mild flavored oil.
  • Active Dry Yeast
  • Granulated Sugar
  • Egg
  • Salt
  • Butter, salted

How To Make Cheese Rolls

  • Stir the water, oil, yeast and sugar in a stand mixer and allow it to rest for 10 minutes. Using your dough hook, mix in the salt, egg and flour and dried herbs.
  • Knead with dough hook attachment until will incorporated and dough is soft and smooth. (just a few minutes)
  • Form dough into 12 balls on a lightly floured surface and then place in a greased 9 x 13 inch baking pan and allow to rest uncovered at room temperature for 10-15 minutes.

  • Brush dough with 2 Tbsp melted butter. This helps the cheese stick better!
  • Sprinkle tops of rolls with cheese mixture. I sprinkled about a tablespoon or two of cheese on each roll. Can you have too much cheese!?!?

  • Bake in a 400 degrees F oven for about ten minutes or until they are nice and golden brown.

Tips from leigh Anne

  1. If you have any melted butter left you can brush the herb rolls again after taking them out of the oven.
  2. Add some garlic powder in with the seasonings or sprinkle on top with the cheese for some garlic herb dinner rolls.
  3. Sprinkle with a bit of flaky sea salt before baking over the top of the cheese.

Frequently Asked Questions

Why didn’t my rolls rise?

If your rolls didn’t rise it is usually one of two things.
Water Temperature: Either your water was too hot and killed your yeast or it wasn’t warm enough to activate your yeast.
Expired Yeast: Always check the expiration date on your yeast package. If the yeast is expired it may not activate. For more tips and tricks on working yeast check out this post.

What is the best way to store leftover herb rolls?

Store them in an airtight container at room temperature for 2-3 days. You can also freeze leftover rolls in the freezer in for up to 3 months.

  • 1 cup plus 2 Tbsp warm water
  • 1/3 cup oil
  • 2 Tbsp active dry yeast
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 egg
  • 3 1/2 cups flour
  • 2 cups grated cheese combination of Cheddar, Parmesan, Asiago and Romano
  • 4 Tbsp melted butter divided
  • 1 1/2 Tbsp fresh rosemary chopped fine or 3/4 Tbsp dry

Instructions

  • Heat oven to 400 degrees.
  • In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 10 minutes. Using your dough hook, mix in the salt, egg and flour and dried herbs.
  • Knead with hook until will incorporated and dough is soft and smooth. (just a few minutes)
  • Form dough into 12 balls and then place in a greased 9 x 13 pan and allow to rest for 10 minutes. Brush top of rolls with 2 Tbsp melted butter.
  • Sprinkle each role with 2 Tbsp of grated cheese mixture.
  • Bake for 14-16 minutes at 400 degrees or until golden brown.
  • Remove from oven and brush with 2 Tbsp melted butter.

Notes

  2. Add some garlic powder in with the seasonings or sprinkle on top with the cheese for some garlic herb dinner rolls.
