Several years ago we had 12 straight days of snow here in Portland.  I originally posted this recipe back during that snow storm.  We had been stuck in the house because of snow and ice and we needed a treat. 

When I announced I was making ice cream for dessert my daughter replied, “It’s too cold!”  My son, Logan’s reply was “It’s never too cold for ice cream!”  I have to agree with Logan and I decided cinnamon ice cream was the perfect flavor for a cold weather day.  Kind of like eating a cold cinnamon roll!

Ingredients Needed

  • Half and Half. You can also use whole milk.
  • Heavy Cream
  • Sugar
  • Cinnamon
  • Pinch of Salt
  • Vanilla Extract

How to Make Homemade Cinnamon Ice Cream

  • Combine cream, half and half, sugar, cinnamon, salt and vanilla in a bowl.
  • Whisk well to combine.
  • Pour milk mixture into ice cream maker and process according to manufacturer’s instructions.
  • After it is done processing, scoop into an insulated ice cream container and place in freezer to allow ice cream to set up.

Tips

  • Use a good quality cinnamon. Cinnamon is the star of the show here!
  • I use ground cinnamon, not cinnamon sticks.
  • Vary the flavor a bit by combining cinnamon with other spices such as ginger, nutmeg, cloves or cardamon.
  • Cinnamon and chocolate are also a good combo so add in some chocolate chips or drizzle cinnamon ice cream with hot fudge sauce.

Malted Milk Ice Cream

Creamy ice cream with the delicious flavor of malted milk balls.  It will soon be a family favorite!

Ingredients

  • 1 1/2 cup whole milk
  • 1 1/2 cup half and half
  • 2 cup heavy whipping cream

Instructions

  • Once it has thickened  but before it is finished processing  pour in the crushed malted milk balls

Why You’ll Love This Recipe

The texture is amazing! This pumpkin ice cream recipe has a creamy pumpkin ice cream base and crumbled up oatmeal cookies or graham crackers to add texture.

It’s easy! There is no cooking required for this recipe. Unlike many ice cream bases, this one does not use eggs so does not need to be cooked.

Ingredients

  • Milk. I use a combination of whole milk, heavy whipping cream and half and half. Half and half is 50:50 milk to whipping cream. Note: If you don’t have half and half where you live, replace it with half whipping cream and half milk.  But if you can get half and half I recommend using it.  I have found that there is a difference in the texture it gives the ice cream.
  • Sugar. Use a combination of brown sugar and white granulated sugar.
  • Pumpkin Pie Filling. Definitely use the canned pumpkin pie filling vs. the canned pumpkin puree. You want the spices that are in the pie filling to give it that pumpkin pie flavor.
  • Graham Crackers . I have used both oatmeal cookies and graham crackers in this recipe and both are great. If I’m using oatmeal cookies I use this oatmeal cookie recipe but you can also use store bought,

How to Make Pumpkin Pie Ice Cream

  • Mix together sugars and pumpkin pie filling, salt and vanilla.
  • Add in milk, whipping cream and half and half. Stir to incorporate.
  • Pour mixture into bowl of ice cream maker and process according to manufacturer’s directions.
  • Stir in broken cookies or crackers the last few minutes of processing time so they can incorporate cookies throughout ice cream.
  • Place ice cream into an insulated container and place in freezer to set up.

Add In Ideas for Pumpkin ice Cream

Add Ins can be added into the ice cream the last few minutes of churning.

  • Nuts. Candied pecans or walnuts would be delish.
  • Chocolate. Add in mini chocolate chips or flakes of chocolate like I did in this Mint Gelato. White chocolate would also be yummy in this ice cream.
  • Cookies. Other cookies that work great are Biscoff, Oreo and Gingersnap although I found the Gingersnap a little too strong a flavor for my taste. Even a chocolate chip cookie would be yummy.
  • Toffee Bits.
  • Pie Crust. If you have some leftover baked pie crust you could even put pieces of it into the ice cream.
  • Graham Cracker Crumbs. Before serving, sprinkle the top of the ice cream with some graham cracker crumbs or broken up graham cracker for more texture and flavor.

  • When ice cream is almost done, stir in broken cookies or crackers and process for a few more minutes to incorporate cookies throughout ice cream.

Notes

I have used both oatmeal cookies and graham crackers and both are great. Ginger cookies could be used but they are definitely a stronger cookie and can overpower the pumpkin flavor.

What You Will Love About this Recipe

The beginnings of Fall have arrived. The cooler mornings that I love, the leaves beginning to change and lots of apples at the Farmer’s Market! 

Apple Pie Ice Cream is the perfect way to enjoy those apples. It has all the flavors and things I love about apple pie but in a homemade ice cream form.  There are yummy, cinnamon and sugar coated apples along with the crunch of cinnamon graham crackers all in a cinnamon based ice cream. 

3 scoops of apple pie ice cream

Ingredients Needed

  • Milk. This recipe uses a combination of whole milk, heavy cream and half and half for the best flavor and texture. If you can’t get half and half where you live, you can replace it with half milk and half whipping cream but if it is available, I recommend using it.
  • Sugar
  • Salt
  • Vanilla Extract
  • Cinnamon
  • Apples. I like to use a tarter granny smith apple since the ice cream is so sweet.
  • Butter. Salted or unsalted is fine
  • Graham Crackers. I used cinnamon graham crackers but you could also use regular graham crackers.

How to Caramelize Apples

The apples are caramelized and then cooled before adding them to the ice cream.

  • Peel, core and dice apples.
  • Saute apples in butter in a skillet.
  • Add in 3 Tbsp sugar and 1 tsp cinnamon and cook until browned and caramelized, about 8-10 minutes.
  • Remove apple mixture from pan and allow to cool.

How to Make Apple Pie Ice Cream recipe

  • Whisk up ice cream base ingredient and pour ice cream mixture into ice cream maker and process according to manufacturer’s instructions.
  • Once the ice cream has thickened up and is done churning, stir in the cooled caramelized apples and broken up cinnamon graham crackers.
  • Pour ice cream into an insulated ice cream container or freezer-safe container and freeze until firm.

  • 1 Tbsp butter
  • 3 Tbsp sugar
  • 1 tsp cinnamon
  • 5 cinnamon graham crackers broken into small pieces

Instructions

  • Peel, core and dice apples.
  • Saute apples in butter. Add in 3 Tbsp sugar and 1 tsp cinnamon and cook until browned and caramelized, about 8-10 minutes. Remove from pan and allow to cool.

What is a Creamsicle?

Creamsicles were always my summer treat of choice when the neighborhood Good Humor ice cream man came to visit when I was a kid. A creamy vanilla ice cream popsicle coated in a layer of orange sherbet. It just screams summer. Fudgesicles were another favorite treat.

You can find all the flavor and taste of that favorite treat in this Orange Creamsicle Ice Cream. It’s like you took that creamsicle, put it in a bowl and mixed it all together.

Ice Cream Ingredients

  • Whole Milk
  • Half and Half, if you don’t have half and half, use half heavy whipping cream and half whole milk.

How to Make Creamsicle Ice Cream

  • Add sugar to a bowl and add in milk, half and half and cream.

Can I make this without an ice cream maker?

What kind of ice cream maker do you use.

For years I used this Cuisinart table top ice cream maker and it works great. We recently upgraded to an ice cream compressor and it is expensive but amazing!!

How Long Will Ice Cream Keep in the Freezer?

Storing ice cream in a container with a tight fitting lid, where air can not get to is important. It will prevent ice crystals from forming on the ice cream. Ice cream is best eaten within 1-2 weeks.

Creamsicle Ice Cream

A smooth and creamy orange and vanilla ice cream that tastes like that favorite childhood treat.

Ingredients

  • 1 1/2 cups sugar
  • pinch of salt
  • 1 cup orange juice fresh
  • 1 cup whole milk
  • 1 cup half and half
  • 1 1/2 cup whipping cream
  • 1 tsp orange extract
  • 1 Tbsp vanilla extract

Instructions

  • Add all ingredients together and stir to dissolve sugar.
  • Pour into ice cream maker and process according to manufacture's instruction
