All the flavor of a classic root beer float without using any root beer soda! This root beer float ice cream is the perfect summer treat!

Why You’ll Love This Recipe!

If you love a classic root beer float, you are going to love this root beer float ice cream. This homemade ice cream has all the flavor and creaminess of a root beer float. It’s like you took a spoon and blended up your root beer float.

I’ve add in some crushed meringue cookies into the ice cream to give it some great texture and vanilla flavor.

Ingredients Needed

  • Whole Milk
  • Half and Half
  • Heavy Whipping Cream
  • Sugar
  • Vanilla Extract
  • Root Beer Extract. The extract gives you a better and stronger root beer flavor than just regular root beer.
  • Vanilla Meringue Cookies. I buy mine at Trader Joes. You can also make your own, using this recipe. The ice cream is delicious without the cookies if you can’t find them but I love the texture they give the ice cream.

How to Make Root Beer Float Ice Cream

  • Mix together your milk, heavy cream and half and half.

  • Add in sugar, and extracts.

  • Mix together until well combined.
  • Pour into ice cream maker and process according to manufacture’s instructions.

  • Right before the ice cream is done processing, stir in crushed meringue cookie pieces.
  • Place ice cream in a freezer container and allow it to set up.

Frequently Asked Questions

Do I have to use root beer extract?

You can use root beer soda but the root beer flavor will not be as strong. I highly recommend buying the extract.

How long will homemade ice cream last in the freezer?

Stored in an airtight, insulated ice cream container it will last for a couple of weeks.

Do I have to use an ice cream maker?

This homemade ice cream recipe is designed to be made in an ice cream maker and is not meant to be a no churn ice cream.

What kind of ice cream maker do you use?

I use a Cuisinart 2 qt. ice cream maker. I then transfer the ice cream into this insulated ice cream container to let the ice cream harden up.

Creamy ice cream with all of the flavor of your favorite summer treat.  Root beer float ice cream is a yummy root beer float without the mug!

Cook:30 minutes minutes

Ingredients

  • 1 1/2 cup sugar
  • 1 1/2 cups whole milk
  • 2 cups heavy whipping cream
  • 1 1/2 cups half and half
  • 1 tsp vanilla
  • 1 1/2 tsp root beer concentrate
  • 1 cup meringue cookies crushed

Instructions

  • Mix all ingredients together except for meringue cookies.
  • Process in ice cream maker according to manufacturers directions
  • When ice cream has set up, stir in meringue cookie pieces and then store in freezer to harden.

Tips & Notes:

I highly recommend using root beer extract and not root beer soda.  you will not get the same root beer flavor with soda.
