Sausage Tortellini Soup

Sausage Tortellini Soup is full of delicious flavors and is the perfect cold weather meal.  It is packed with tortellini, sausage, and zucchini and I guarantee everyone will want the recipe.

The recipe for this Sausage Tortellini soup is the probably the recipe I have had the most requests for. The recipe was given to me years ago by a friend and it’s been a frequent visitor to our weekly meal plan ever since.

The soup has a rich tomato based soup and is full of vegetables, Italian sausage  and cheese tortellini. It is the perfect cold weather meal, it will warm you up and fill you up at the same time!

Ingredients Needed

  • Sweet Italian Sausage
  • Cheese Tortellini
  • Beef Broth
  • Diced Tomatoes
  • Tomato Sauce
  • Carrots
  • Onion
  • Garlic
  • Dried Basil
  • Oregano
  • Zucchini
  • Parmesan Cheese

How to Make Sausage Tortellini Soup

  • Brown sausage, remove from pan, drain and set aside.
  • Sauté onions and garlic until tender.
  • Add beef broth, water, carrots, tomatoes, basil, oregano, tomato sauce and sausage to the pan and bring to a boil.
  • Reduce heat and simmer, uncovered, for 20 minutes.
  • Skim off any fat.
  • Add zucchini and tortellini to the soup and simmer until tortellini and zucchini are tender, about 20 minutes.
  • Garnish with Parmesan cheese.

Tips from leigh Anne

  1. I use a mild ground sausage but if you like a bit of a kick, use spicy Italian sausage.
  2. You can use fresh or frozen tortellini, both work great. The frozen tortellini may just take a bit longer to cook.
  3. I use zucchini and carrots but you could also add in mushrooms and peppers. Saute the peppers along with the carrots and add the mushrooms in with the zucchini.

Frequently Asked Questions

Can I make sausage tortellini soup ahead of time?

If you would like to prepare the soup ahead of time, follow directions up until zucchini and tortellini is added. Allow the soup to cool and then refrigerate. When ready to serve, bring the soup to a boil, add the pasta and zucchini, and allow to simmer for 20 minutes.

Can I freeze sausage tortellini soup?

This soup freezes great, just don’t add the tortellini before freezing.  It absorbs too much of the soup and begins to break down. 
To freeze, cool the soup to room temperature and then place in a large freezer bag or freezer container.
To reheat, thaw soup in refrigerator, place in a saucepan and bring to a low boil, add in the tortellini. Cook until tortellini is tender and serve.

Ingredients

  • 1 lb. sweet Italian sausage
  • 1 cup carrots thinly sliced
  • 1 cup chopped onion
  • 2 14 oz. diced tomatoes
  • 2 cloves garlic chopped
  • 1/2 tsp. dried basil
  • 1/2 cup water
  • 1/2 tsp. oregano
  • 5 cups beef or chicken broth
  • 1 – 8 oz. can tomato sauce
  • 1 1/2 cups sliced zucchini
  • 8 oz. fresh meat or cheese tortellini I use cheese
  • Grated Parmesan cheese

Instructions

  • Brown sausage, remove from pan and drain.
  • Set aside.
  • Saute onions and garlic until tender.
  • Add water,broth, carrots, tomatoes, basil, oregano, tomato sauce and sausage.
  • Bring to a boil. Reduce heat and simmer uncovered for about 20 minutes.
  • Skim off any fat and stir in zucchini and tortellini.
  • Simmer for an additional 20 minutes or until tortellini and zucchini are tender.
  • Garnish with Parmesan cheese.

Tips & Notes:

If you need to stretch this soup to make it go farther, add in a 29 oz. can of crushed tomatoe.

    My favorite recipe !! I cook for just 2 so have reduced and still full of flavor. I have used chicken italian sausage and regular sausage and both were delicious!

    I used home-canned tomatoes in place of the crushed tomatoes and they were a bit too acidic for the soup ( probably from the addition of citric acid when the tomatoes were being jarred, I assume.) A good pinch of baking soda neutralized the acid and the soup was perfect.
