Why You’ll Love This Recipe

There are all kinds of ways to make teriyaki chicken. I often make it in the crock pot. But today we have a more authentic, traditional version.

The word teriyaki comes from the Japanese root words teri, to shine, and yaki, to broil or grill. That’s the way traditional teriyaki looks, it’s shiny and has grill marks.

Ingredients Needed

  • Chicken. I prefer to use boneless, skinless chicken thighs for this recipe. You can use boneless, skinless chicken breasts if you prefer.
  • Soy Sauce. I prefer to use low sodium soy sauce. You can also use Tamari if you need a gluten free version.
  • Mirin. This is a Japanese rice wine vinegar and gives the sauce a subtle sweet tang. I highly recommend using it. You can find it in the Asian aisle of the store along with the soy sauce. If you can’t find it, you can substitute dry sherry, sweet marsala wine, dry white wine or rice vinegar will also do, though you’ll need to counteract the sourness with about a 1/2 teaspoon of sugar for every tablespoon you use.
  • Garlic. I use fresh minced garlic.
  • Ginger. If you don’t have fresh you can substitute dried ginger but use half the amount.
  • Sugar. Use granulated sugar or you an substitute honey.

How to Make Teriyaki Chicken

  • Combine the soy sauce and sugar in a sauce pan and bring to a bowl, stir so that the sugar dissolves.
  • Reserve 1/4 cup of marinade to pour over cooked chicken.
  • Let the 3/4 cup of mixture cool and then add in the garlic, ginger and mirin and blend in the blender.
  • Add chicken and marinade to a plastic bag. Place in the refrigerator over night.

  • Grill chicken until cooked through.

  • Slice the chicken, and place on a serving plate.
  • Pour reserved sauce over the top.
  • Serve with rice and garnish with green onions.

Tips

  • Use any chicken that you prefer, but chicken thighs offer more flavor and are less likely to dry out while cooking.
  • For best results, marinade the chicken in the teriyaki sauce overnight.
  • I use a gas grill but you can also use a grill pan on the stove top if you prefer.

What chicken should I use for this recipe?

I like to use boneless, skinless thighs for this recipe but you can also use boneless skinless chicken breasts if you prefer. Trim excess fat off of the thighs.

How do I store leftovers?

Store any leftover teriyaki chicken and rice in separate containers in the fridge for up to 4 days so that the sauce doesn’t make the rice soggy.

Can I add veggies to this?

My favorite veggies to add are bell peppers, broccoli, mushrooms. Saute them in some light oil until tender and then serve them with the chicken over the rice.

Ingredients

  • 8 boneless skinless chicken thighs
  • 1 cup low sodium soy sauce
  • 2 Tbsp mirin
  • 1/2 cup granulated sugar or honey
  • 1 tsp ginger minced
  • 4 tsp garlic minced

Instructions

  • In a sauce pan combine soy sauce and sugar. Bring to a boil and stir to dissolve sugar. Cool. Set aside 1/4 cup.
  • Combine 3/4 cup of soy sauce mixture with mirin, garlic and ginger. Place in blender and blend until smooth.
  • Pour mixture over chicken in a zipper bag. Marinate for at least one hour to overnight.

Orange Glazed Pork Tenderloin is perfect if you are looking for something quick, easy and delicious pork recipe to throw on the grill or in the oven this week. Only five ingredients are needed!

Why You’ll Love This Recipe

Prepare ahead: This is the perfect pork recipe for an easy family meal or to feed a crowd. You can place the pork in the sweet marinade the night before and all you have to do the next day is grill the meat and baste with some orange marmalade.

Five ingredients: This recipe uses all pantry stable ingredients so it is easy to prepare this without a lot of notice.  Just keep a pork tenderloin in the freezer and the other ingredients on your pantry shelf and you can have a delicious dinner ready.

Orange Glazed Pork Tenderloin Ingredients

  • Pork Tenderloin
  • Orange Marmalade
  • Pineapple Juice
  • Soy Sauce
  • Apple Cider Vinegar

Tip # 2. Use plain dental floss or thread to cut the rolls. You can also use a serrated knife.

The meat does marinate for at least an hour but the longer it marinates the more flavor you will have. It can marinate for up to 24 hours.

How to Make Orange Glazed Pork Tenderloin

  • Combine soy sauce, pineapple juice and vinegar to form your marinade.  Place in a zippered bag.
  • Add in pork tenderloin, close bag and refrigerate for at least an hour or overnight.
  • Drain off liquid and discard.
  • Place the orange marmalade in a small saucepan over medium-high heat and simmer until melted.
  • Brush both sides of pork with marmalade.  Reserve about 1/4 cup of marmalade for spreading on meat after slicing.
  • Grill the pork or bake in the oven at 375 degrees F. Glaze several times during the cooking process with orange marmalade.
  • Cook until meat reaches 145 degrees F and give it a 3 minutes rest. Always use a meat thermometer to check the temperature of the meat.

  • Remove meat from grill or oven and give it one more basting of orange marmalade.
  • Slice meat and top with reserved marmalade.

Can I make this in the oven instead of the grill?

What is orange marmalade?

Orange marmalade is made with the peel of the fruit, not the whole fruit.

Store in an airtight container in the fridge for 2-3 days. Reheat in the microwave.

Can I use a pork loin roast instead of a tenderloin.

You can, but you will want to bake it, not grill it. A 3-3 1/2 pound pork loin roast will take about 45 -60 minutes to bake. Use a meat thermometer to check temperature and baste several times during baking process.

Why You’ll Love This Recipe!

This recipe is quick and easy and is a perfect weeknight meal. It uses ingredients you probably have on hand and it cooks quickly on the grill. We can grill pretty much year round here in Portland, Oregon but sometimes we have to stand under an umbrella to do it! But, if you don’t have a grill, no worries, it can be done in the oven or it’s just too cold, wet or snowy outside to grill.

Ingredients Needed

  • Chicken. For this recipe I used boneless, skinless chicken thighs but you could also use chicken breasts.
  • Garlic Powder
  • Chili Powder
  • Salt
  • Ground Cumin
  • Paprika
  • Cayenne Pepper depending on how hot you like it. You can also use red pepper flakes to give it some heat.
  • Honey
  • Apple Cider Vinegar

How to Make Spicy Honey Chicken 

  • Mix together a spice rub of paprika, cumin, garlic powder, chili powder and cayenne.  The cayenne gives it some heat so if you don’t want heat, leave it out or reduce the amount you use.
  • Toss chicken with rub and make sure chicken is coated on both sides.
  • Mix together honey and vinegar for glazing.
  • Heat grill and brush with oil to prevent chicken from sticking.
  • Grill chicken for about 3-4 minutes per side or until the temperature reaches 160 degrees F.
  • Brush both sides of the meat after 1-2 minutes of grilling with honey and vinegar mixture.
  • Allow meat to rest for 5 minutes after removing from the grill so that it reaches 165 degrees F.

Tips

  • I always use my Thermoworks Thermapen to check the temperature of my meat.  Don’t cut into it with a knife to see if it is done as you release all those yummy juices that keep the meat moist and give it flavor.  Use a meat thermometer.
  • If grilling your meat, reduce the temperature of the grill so that the sugar in the glaze doesn’t burn.  You want it to thicken and caramelize and create a delicious coating on the chicken. 
  • If you are baking the chicken in the oven, place the chicken with the glaze on it, under the broiler until the glaze bubbles and caramelizes, watch it carefully!

Frequently Asked Questions

What kind of chicken is best for grilling?

I use both chicken breasts and chicken thighs. If you use a chicken breast, pound the chicken to make it make it more even in thickness.  It will cook more evenly this way.  
Thigh meat will cook quicker than breast meat and it dries out less easily. Not only is thigh meat nice and moist it is also inexpensive!

Can I bake chicken instead of grilling it?

Yes, you can! You just won’t get those charred edges and grill marks but it will still be delicious.
You can bake the chicken in the oven at 425 degrees F. Baste the chicken with the honey and vinegar mixture several times.
Bake 4-5 minutes on each side.

  • Grill chicken a few minutes on each side, until cooked through. Or bake in a 450 degree oven.
  • Combine honey and vinegar in a small bowl, stirring well until combined.
  • Brush mixture on chicken (both sides) in the final moments of grilling.
  • Now because the glaze is sugar-based, you’ll want to turn the heat down so it doesn’t burn, but let it cook for a few minutes to caramelize. If you are using an oven, place the glazed chicken under the broiler for a minute or so.

Why You’ll Love This Recipe!

It’s June and that means it must be summer right?  You never know here in the Pacific Northwest. One day it’s chilly pouring rain and the next day it’s 80 degrees and sunny! We have learned though that regardless of the weather we can still fire up the BBQ and grill!

Today’s London Broil recipe is a quick and easy dinner you can prep ahead and throw on the grill when you are ready to eat. That is my kind of summer meal!

What is London Broil?

According to Wikipedia, “London broil” originally referred to broiled flank steak but today butchers may label top round or other cuts of meet as “London Broil” and the term refers more to the method of preparation and cooking than the specific cut of meat. It is typically a lean but tough steak that is marinated and then grilled or broiled.  You will find London Broil steak anywhere between 1-4 inches thick.

Because it is a tougher cut of meat it is perfect for marinating.

London Broil Marinade Ingredients

  • Soy sauce. We use low sodium soy sauce.
  • Balsamic vinegar. See FAQ below for substitutions if needed.
  • Worcestershire sauce
  • Olive oil
  • Lemon juice. This also helps tenderize the meat.
  • Garlic
  • Oregano
  • Basil
  • Parsley
  • Honey. You can also substitute maple syrup or brown sugar.

How to Make London Broil Marinade

  1. Combine marinade ingredients and place meat and marinade into a zippered plastic bag.
  2. Refrigerate for a minimum of two hours to overnight (up to 24 hours).
  3. Remove meat from refrigerator about 30 minutes before grilling.

How to Grill London Broil

  • Preheat grill
  • After allowing meat to sit at room temperature for 30 minutes.
  • Grill meat for 4-5 minutes per side, depending on thickness of meat and desired doneness. 125-130 degrees F for rare, 135 degrees F for medium-rare and 145 degrees F for medium. It can also be cooked under the broiler in the oven. We like to serve it medium-rare.

How to Cook London Broil without a Grill

You can also broil the meat.

  • Preheat broiler to high.
  • Place meat on a broiler pan, discard the remaining marinade.
  • Broil for 8-12 minutes (depending on desired doneness) and turn the meat once, halfway through the broiling process. Time will also vary depending on how thick your meat is.
  • Transfer to cutting board and allow to rest for five minutes and then slice.

Tip from Leigh Anne

  1. Always use a meat thermometer to check the temperature of your meat. Do not cut into it with a knife, this will release the juices which helps to keep the meat moist and tender.
  2. If you are using fresh herbs instead of dried herbs in your marinade, use twice as much.

  • Garnish with some fresh parsley or chives.

What can I use instead of London Broil?

If you can’t find London Broil you can use other cuts of beef such as flank steak, top round steak, top round roast or skirt steak.

How do you slice London Broil?

You want to cut the meat going across or against the grain (this is across the natural lines you see running through the meat.). This will make the meat more tender, juicy and easier to chew.

What is a good substitute for balsamic vinegar?

If you don’t have balsamic vinegar you can use rice vinegar. You can also use apple cider vinegar or red wine vinegar and add in 1/2 tsp of sugar for your tablespoon of vinegar

How long will leftover London Broil last?

The cooked steak will last in an airtight container in the fridge for 3-4 days. It can also be stored in the freezer for 2-3 months. Allow frozen meat to thaw in the refrigerator overnight before serving.

Grilling your veggies is so easy and I think they taste better when grilled on the BBQ grill or the Traeger. I love the slightly smoky flavor cooking asparagus on the grill gets and if you put it directly on the grill it will get nice char marks too.  So easy and simple.

Ingredients

It only takes a few simple ingredients to make the perfect grilled asparagus. You can use my suggestions or season it with your favorite seasoning combinations.

  • Asparagus, medium thickness
  • Olive Oil
  • Garlic Salt
  • Parmesan Cheese, grated

How to Grill Asparagus

Start with a thicker asparagus for grilling. It holds up better and if you don’t want to put the asparagus in a metal pan you can lay it right on the grill and it won’t fall through.

  • Place the olive oil and seasoning into a plastic zippered bag and then add the asparagus and toss it to coat. You want a nice light coat over all of the asparagus.

  • Place asparagus in a disposable pan or directly on the grill. Shake the pan or turn once during cooking.
  • Grill for about 10 minutes, until desired doneness. (I like to shake the pan a few times during the cooking process.)
  • Use a fork to test the asparagus for tenderness.
  • Remove the asparagus from the pan or grill and place on a serving dish. sprinkle with some grated Parmesan cheese and serve.

Frequently Asked Questions

Can I Place Asparagus Directly on the Grill?

Yes, you can.  Just make sure your asparagus doesn’t fall between the grate! You may want to skewer your asparagus together to help prevent this. Close the cover to the grill and cook on high heat. Turn once during the cooking process.

How Long Does It Take to Cook ?

Your cook time will vary depending on the size of your asparagus but it usually takes about 10 minutes. Use a fork to test the tenderness.
