Amazing Flavor. These Greek lemon potatoes are roasted in a bath of chicken broth, lemon juice, garlic and Oregano. All the liquid is absorbed into the potatoes for incredible flavor and tender texture.

Ingredients Needed

  • Red Potatoes. You can also use Yukon Gold Potatoes
  • Chicken Broth. You can also use vegetable broth.
  • Fresh Lemon Juice
  • Extra Virgin Olive Oil
  • Dried Oregano
  • Black Pepper
  • Minced Garlic Cloves
  • Fresh Parsley

Tips from leigh Anne

  1. I cooked my Greek lemon potatoes in a ceramic 9 x 13 pam but I highly recommend using a disposable aluminum foil pan because your dish ends up getting pretty dark and black!  Clean up is much easier when you can just throw the pan away.
  2. The potatoes bake for about 1 1/4 – 1 1/2 hours so plan ahead. They also need to be stirred every 20 minutes so plan on being around as they bake.  
  3. All the liquid should be absorbed by the last 20 minutes of baking time. It is gone before that, add in some additional chicken broth.

How To Make Greek Lemon Potatoes

  • Preheat oven to 450 degrees F
  • Cut potatoes in half or into quarters depending on size of potatoes. You want them bite size.

  • Place cut potatoes in 9 x 13 pan (foil pan recommended)
  • Mix together chicken broth, lemon juice, olive oil, oregano, pepper and garlic.

  • Pour mixture over potatoes. There will be a lot of liquid but don’t worry, it will all absorb.

  • Bake uncovered at 450 degrees F for 1.5 hours, stirring every 20 minutes as they bake.

  • Add more liquid if needed the last 20 minutes.( I didn’t have to)
  • Liquid will evaporate the final 20 minutes or so. If liquid evaporates sooner add in some additional chicken broth but all the liquid should be absorbed by the end of the baking period. Potatoes will be fork tender.
  • Garnish with fresh parsley.

Store any leftover potatoes in an airtight container in the refrigerator. Reheat in the microwave or cover with foil and place in a 300 degree F oven until heated through.

Why You’ll Love This Recipe

I am a non-potato eating girl married to an Idaho Boy, grandson of a potato farmer.  That can be a bit of a problem some times.  Over the years though I have worked hard to try to learn to enjoy some potatoes.  I have learned that I can handle small and crisp potatoes.  So I tend to cut up my potatoes small and cook them for a long time!

Perfect Side Dish. This recipe for crispy Parmesan potatoes fits my potato criteria pretty well.  Small, crisp and covered in Parmesan cheese.  I cut the potatoes into a nice small cube size but you can make them any size you want.

Ingredients Needed

  • Potatoes, for this recipe I used a firm russet potatoes but I often will use a red potato.  Yukon gold potatoes also work but they are a little softer potato.
  • Parmesan Cheese, finely grated. I use the store bought finely grated Parmesan cheese rather than grating it myself, it gives it a crisper finish.
  • All Purpose Flour
  • Salt and Pepper
  • Butter, salted
  • Parsley, dried or fresh parsley for garnish

How to Make Roasted Parmesan Potatoes

  • Cut up the potatoes into bite size pieces or potato wedges, about 3/4 of inch in size.
  • Combine cheese, flour, salt and pepper in a bag or bowl. 
  • Add the potatoes and shake or toss to coat potatoes.

  • Drizzle melted butter on the baking sheet
  • Place potatoes in a single layer on the pan.
  • Bake at 350 degrees F for until potatoes are crispy on the edges and golden brown, about one hour, turnin them every 15 minutes to make sure they are evenly golden brown.

Tips from leigh Anne

  1. Cut potatoes into uniform pieces to ensure even roasting. I have found that under an inch works best.
  2. For best results, use a firm potato like a russet or red potato.
  3. Garnish with additional Parmesan cheese and a sprinkle of parsley or other fresh herbs for a little extra flavor and color.

Frequently Asked Questions

Can I use something other than butter to roast the potatoes.

You could substitute butter for olive oil if you prefer but I think the butter gives the potatoes more flavor.

Can I add in other herbs or seasoning?

For some additional flavor you could add in dried rosemary or thyme in with the flour mixture. You could also use red pepper flakes, paprika or garlic powder for yummy flavor. Get creative with the herbs and spices. you add in or leave it simple with just the Parmesan cheese and some dried herbs on top.

What is the best way to store leftover parmesan roasted potatoes?

Keep them stored in an airtight container in the fridge for 2-3 days. Reheat on the stovetop in a frying pan or in the microwave.

  • 7-8 potatoes yukon gold, russet, or red

Why You’ll Love This Recipe

Quick and Easy! This recipe for Oregano Chicken comes together very quickly and the cooking time is only thirty minutes so you can get dinner on the table quickly!

Handful of Ingredients. Not only is this recipe easy it only requires a handful of ingredients. I love to use chicken thighs because I find them more flavorful and tender but you can also use chicken breasts. They are also less expensive!

Ingredients Needed

  • Chicken Thighs, skinless, with bone.
  • Seasonings, dried oregano, garlic powder and minced onion.
  • Olive Oil, you can also use canola oil or vegetable oil.
  • Lemon, zest and juice

How to Make Oregano Chicken

  • Trim off any excess skin from the chicken thigh. Rinse the chicken and pat dry. Place on a baking sheet.

  • Mix together spice blend in a small bowl and sprinkle and rub the spices into both sides of the chicken thigh.  The main seasoning in this recipe is oregano but you could substitute that out for another favorite seasoning such as rosemary, basil, thyme or whatever your favorite is.
  • Place the chicken skin side down onto the baking sheet.

  • Drizzle the skinless side of the chicken thigh half of a mixture of olive oil, lemon juice and lemon zest.  So much good flavor here!

  • Bake at 350 degrees F for 15 minutes.
  • Remove chicken from oven, turn the pieces over and drizzle/brush with the remaining olive oil mixture.
  • Return chicken to oven and bake until chicken is cooked through (165 F) and the skin is golden brown and crispy, about 15 more minutes.

Tips from leigh Anne

  1. Use fresh oregano instead of dried oregano if you prefer. Use twice as much fresh oregano as dried oregano.
  2. Instead of oregano, use your favorite herbs or combination of herbs and seasoning. To keep it simple you could just use Italian Seasoning with some salt and pepper.
  3. If you prefer you can use chicken breasts.  I recommend using chicken breasts with the bone in and the skin on – cooking time will vary though. Be sure to use a meat thermometer to check the internal temperature.

Frequently Asked Questions

What temperature should chicken be cooked to?

The recommended temperature for chicken is 165 degrees F. I let mine cook to about 155-160 and then let it rest for a few minutes to bring it up to temperature. Always use a meat thermometer to check, do not cut into the meat to see if it is done as that releases all the juices and dries the meat out.

Can I use chicken breasts instead of chicken thighs?

You can use bone in chicken breasts with the skin on for Oregano Chicken. The skin has extra fat in it and forms a nice lovely crispy coating that is so delicious! The cooking time will be longer for a chicken breast though so be sure and use a thermometer to check.

How do I store leftover Oregano chicken?

Store leftover chicken in an airtight container in the refrigerator for 3-4 days.
To reheat leftovers in the microwave until warmed through.

  • 6 chicken thighs with the skin and bones
  • 2 tsp dried oregano

How to Make Ranch Potatoes

  • Cut potatoes in half or quarters depending on the size of the potato. Leave skin on. Place in a zippered plastic bag.
  • Add dry dressing mix, oil to potatoes in zippered bag and toss to coat.

  • Preheat the oven to 450 degrees F.  Place the sheet pan into the oven while it preheats.
  • Remove pan from the oven and spray it with non stick baking spray.

  • Add the ranch roasted potatoes to the HOT cookie sheet.
  • Turn potatoes every ten minutes and bake until tender, cooked through and golden brown on the outside.

Tips from leigh Anne

  1. Putting the potatoes on a hot baking sheet helps prevent the potatoes from sticking to the pan as they roast. It’s a great trick!
  2. Garnish the potatoes with some fresh parsley or freshly chopped green onions. It gives some nice color in addition to a bit of flavor.

How to Make Roasted Sweet Potatoes

  • Peel sweet potatoes if desired. Cut the potato into 1/2-3/4 inch wide discs. Cut each disc into 1/2-3/4 inch pieces.

  • Place sweet potato cubes on a parchment paper lined baking sheet and drizzle with olive oil. Don’t crowd your potatoes on the baking sheet – they will cook better with air circulation around them. If you need to, use two baking sheets.

  • Season with salt, pepper and dried thyme. You can use fresh or dried thyme, use half the amount of dried thyme. You can add in any additional seasoning you like. Toss to coat.

  • Put into a 425 degrees F oven. Bake for 30 minutes, tossing every 10 minutes. or until desired doneness. You want them fork tender.

  • Serve as is or I like to drizzle them with real maple syrup while they are still warm.

  1. When cutting sweet potatoes, start by cutting it into half inch round discs. Then cut each disc into 1/2 inch cubes. Making the pieces the same size with ensure even cooking of the potato.
  2. Spread out the sweet potatoes on a large baking sheet as much as possible. They will get crisper if they aren’t touching other potatoes.
  3. Toss every 10-15 minutes while roasting to prevent burning.
  4. Peeling the potatoes is optional but I prefer them peeled.
  5. Top the roasted sweet potatoes with some crispy bacon for even more flavor.
  6. Add additional seasonings such as cumin, chili powder, paprika, garlic powder or parsley.
  7. You can substitute yams or butternut squash for the sweet potatoes.

What type of oil should I use for roasting vegetables?

If you are going to be roasting or heating the oil you should use an oil with a higher smoke point. I prefer olive oil for roasting. Vegetable oil, avocado oil and canola oil can also be used, but don’t have as much flavor as olive oil.

What is the best way to store leftover roasted sweet potatoes?

Keep them stored in an airtight storage container in the fridge for up to 4 days. They will soften up as they sit in the refrigerator.

The caramelized exterior and soft interior of these roasted sweet potatoes is perfection. They can be drizzled with maple syrup for extra sweetness

Ingredients

  • 3-4 sweet potatoes peeled and diced
  • 1 Tbsp fresh thyme or 1 tsp dried thyme
  • salt and pepper
  • 2-3 Tbsp maple syrup
  • olive oil

Instructions

  • Peel, slice and cube sweet potatoes. Place on a parchment paper lined baking sheet, with space between them.
  • Drizzle olive oil over sweet potatoes and toss to coat.
  • Sprinkle with salt, pepper, and fresh or dried thyme
  • Bake at 425 degrees F for 30 minutes. Tossing every 10 minutes.
  • Drizzle with maple syrup to taste and toss to coat.
  • Serve warm or room temperature.
