Apple Muffins

Apple Muffins are full of apples and cinnamon chips and then topped with a delicious crumb topping. They taste just like Fall but are good anytime of year.

What is it about Fall that just says apples, cinnamon and nutmeg? Whether it is in an apple pie or in a muffin, it’s an amazing flavor combination.

These muffins are easy to make, moist and delicious. They are loaded with apple and cinnamon chips and topped with a yummy streusel topping made from butter, brown sugar, cinnamon and flour. You are going to love them.

Ingredients Needed

  • Apples, I used Granny Smith
  • All Purpose Flour
  • Sugar, granulated sugar and brown sugar
  • Butter
  • Eggs
  • Baking Poweder
  • Baking Soda
  • Vanilla Extract
  • Cinnamon
  • Nutmeg
  • Salt
  • Cinnamon Chips, cinnamon flavored chips that can be found in the baking aisle next to the chocolate chips.

How to Make Apple Muffins

  • Beat the butter, sugars and eggs together until smooth. Add in vanilla and mix to combine.
  • Fold in apples and cinnamon chips.
  • Combine dry ingredients in a separate bowl and whisk to combine.
  • Add flour mixture into the wet mixture gradually, mixing just until combined.
  • Spoon the mixture into prepared muffin pan.

  • Add the crumb topping.

  • Bake at 375 degrees F until a toothpick comes out clean, about 20 minutes.
  • Remove from the oven and allow to cool for 5 minutes in the muffin tin. Then remove from tin and place on cooling rack.

Tips

  1. When mixing muffin batter, do not over mix.  I like to do it by hand so that I don’t over beat it in the mixer.  Over mixing the batter can cause it to be tough.  Just stir ingredients together until incorporated.
  2. Use a cupcake liner to make it easier to remove the muffins from the muffin tin.
  3. I also use this scoop to make sure my muffins are all the same size. This helps the muffins to bake evenly.

Frequently Asked Questions

What type of apples are best for apple muffins?

The recipe calls for diced apple and grated apple.  I always use a  Granny Smith apple but you could use any tart, crisp apple.  Some good substitutes are a Gala, Fuji or Honey Crisp. 

Can I remove the cinnamon chips from the apple muffin recipe?

If you want to remove the cinnamon chips from the recipe, increase the cinnamon from 1/2 tsp to 1 tsp.

Apple Muffin Recipe

These apple muffins are full of apples and cinnamon chips and then topped with a delicious strudel mixture. They taste just like Fall but are good anytime of year.

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/4 tsp vanilla
  • 3 apples peeled (1-shredded and 2 chopped)(I used Granny Smiths)
  • 1/2 cup cinnamon chips

Topping

  • 1/3 cup brown sugar
  • 1 Tbsp flour
  • 1/8 tsp cinnamon
  • 1 Tbsp butter

Instructions

  • Preheat oven to 375 degrees. Grease muffin pan or line with cupcake liners.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, beat the butter, sugars and eggs together until smooth.
  • Mix in vanilla.
  • Add in apples and cinnamon chips.
  • Gradually add in the flour mixture. Note that this is a thick batter.
  • Spoon the mixture into greased or lined muffin pan.

Topping:

  • In another small bowl combine the topping ingredients: brown sugar, flour and cinnamon.
  • Cut in butter until mixture is like course crumbs. Sprinkle over tops of mixture in muffin pan.
  • Bake 20 minutes or until toothpick inserted comes out clean.
  • Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Tips & Notes:

Apples – can substitute granny smith apples for Fuji, Gala or Honeycrisp.

    This was my first time making homemade apple muffins and they turned out moist and absolutely delicious! I did add in maybe 1/8th extra cinnamon to the batter. Other than that this was absolutely amazing and it’ll be going in the recipe book for future use. Thank you!

    I made these muffins yesterday and since I didn’t think my 3rd apple tasted very good, I winged it and only used 2 good sized Granny Smith apples. I have standard sized muffin tins and even without using a 3rd apple I made 18 muffins instead of 12 because there was a lot of batter. These are so good, I will definitely make these again with more apples. I was lucky enough to find cinnamon chips-yum but caramel chips sound like a good idea too.

    I LOVE cinnamon chips! I have an amazing pumpkin oatmeal cookie recipe that I add cinnamon chips to….makes them taste divine. So I’m thrilled to see them in your apple muffins! I took my kids to an apple orchard this week for fall break and I think the honey crisp apples we picked will taste great in this recipe! And I completely agree…there just something about apples, cinnamon and nutmeg that screams AUTUMN.
    I can’t wait to try these!
